The recipes do not have any faux vegan food as ingredients. Every recipe has healthy, whole food ingredients listed.
The Mindful Meals recipe book also has raw vegan recipes as well as cooked vegan recipes. There are also beautiful photos of Carolyn’s creations.
Egg-Less Egg Salad
I prepared the Egg-Less Egg Salad recipe with some reservation, because I did not know what to expect.
I have had Carolyn’s food in the past and it was delicious, but it was me making the recipe and not Chef Carolyn.
I also had reservations because I tried recipes from other books and was sometimes disappointed.
I am happy to say that Carolyn’s Egg-Less Egg Salad is a hit. The first bite had my taste buds dancing for joy.
I could not believe how much it tasted like traditional egg salad. I look forward to trying other recipes from the Mindful Meals recipe book.

I saw the video a few days ago, and I got really excited about trying the recipe. I have not tried it yet, but as soon as I go to the store, I will purchase cashews so that I can give this recipe a try. I also want to buy the book. However, I want to know if the ingredients for the recipes can be found in regular grocery stores. I do shop at the local healthy market, but not all of the time. I don't want to buy the book and then realize that I have to make all special purchases just to try out the recipes. I can tell by your expression in the video that it turned out really good!
Ingredients found in the recipes can be found in a regular grocery store. Carolyn uses Pink Himalayan salt in most of the recipes, but I used what I had. I think she uses a different sweetener than what I have, but I will use what I have for now. Over all, I think you will be fine shopping at your regular grocery store.
I don't know if I mentioned it in the post or the video, but this recipe book contains raw vegan and cooked vegan recipes in this book.
Thanks for stopping by. Let me know how the egg-less egg salad turns out for you. Yes, it turned out very good, very flavorful.
OMG that looks like it tastes amazing. I found out when I ate some cashews earlier this year that for some reason my body (age maybe)has developed an allergy to them. :-(
Do you think I could substitute peanuts or a bean like garbanzos?
It is an awesome recipe!
I wouldn't use peanuts, but I think garbanzo beans would be a good bean substitute for this recipe.
Good to see you and thanks for stopping by!
Have a great weekend!
