Fennel and Apple Juice

Have you ever juiced fennel before?  Hats off to you if you have juiced fennel, but I have never juiced a fennel.  A few days ago, I had the pleasure of juicing fennel.  I thought I would not like the fennel and apple juice, but I was pleasantly surprised.

I used the fennel and apple juice recipe in Clean, written by Dr. Alejandro Junger.  Since I am following the Clean program (I am on day-10 1/2), I thought it would be fun to try the fennel and apple juice recipe. 

I am glad I had the courage to try it, because it is a delicious juice.  The fennel, has a licorice flavor and is not overpowering in the juice.  It is the perfect blend of fennel and apple with a burst of refreshing flavor.

I was so excited about juicing fennel that I had my daughter help with the juicing process.  Getting your child involved in juicing is fun and a great way to teach them more about fruits and vegetables.  They also get to see how juice is made and participate in the juice making process. 

More About Fennel

Fennel is:

  • popular in Mediterranean recipes
  • crunchy, but not too crunchy
  • slightly sweet, but not too sweet
  • has a light licorice flavor
  • has phytonutrients and antioxidants

Fennel is a good source of:

  • vitamin C
  • fiber
  • folate
  • potassium

Fennel and Apple Juice Recipefennel-apple-lemon-juice

2 organic bulbs of fennel

2 organic green apples

1/2 organic lemon

Juice the ingredients.

If you do not own a juicer, you can still make juice. It will take a little more effort, but it’s worth it.

Cut the fennel bulbs into four sections or more.  Cut the apples into four sections or more.  Place the cut fennel bulbs, apples, and lemon in the blender.

Add enough water (about 1 1/2 – 2 cups) to cover and blend.  If you need to add water, do so, but try not to add too much.  Blend the mixture until smooth.

Use a cheese cloth, nut milk bag or sieve to strain the mixture.  Collect the juice in a container.
