If you are transitioning to eating more raw foods, then you need to give this delicious Raw Stuffed Tomato with Pumpkin Seed Pate a try.
I enjoyed this and will prepare it again. The stuffing reminded me of the taste of ham, but without all the bad stuff.
This recipe was obtained from Hallelujah Acres. There are however, a few changes that I made.
Instead of sunflower seeds, I used pumpkin seeds. I also used dark green Romaine lettuce leaves in the place of spinach.
You will need:
1 large tomato
1/4 cup of pumpkin seeds (soaked overnight,rinsed, and drained)
1 tablespoon of nutritional yeast
1/2 teaspoon of apple cider vinegar
1/4 teaspoon Celtic salt (or to taste)
Dash of cayenne pepper
1/4 cup dark green Romain lettuce leaves (diced fine)
1/2 cup red bell pepper (diced fine)
1/4 cup carrots (finely shredded)
1/4 cup onion (diced fine)
Directions:
Cut top off tomato and set aside. Using a spoon, gently scoop out the insides of the tomato. Place the scooped out pulp and seeds into a blender, add pumpkin seeds, nutritional yeast flakes, apple cider vinegar, sea salt and cayenne pepper and blend (should be fairly thick – if not – add a few more pumpkin seeds). Fold in Romaine lettuce, bell pepper, carrot and onion, and mix all ingredients together well. Stuff the tomato shell and serve on a bed of greens. Enjoy!

It’s a colorful picture. I love raw foods; my diet is mainly raw. I was 100% raw a few years ago.
One of my favorites is collard or nori wraps.

Yes I was, initially it began as a seven-day juice cleanse, followed by a week of nothing but raw foods, well that changed into much longer. 🙂
I’m still high raw; my body just works better on a high amount of raw food.
What brand of nutritional yeast did you use in the above recipe?

I’m high raw too.
The brand of nutritional yeast I used was Braggs. I’m out of that now, but will be using Red Star. The flakes are smaller than Braggs. I think I am going to like the Red Star better.
