When I was a child, I hardly ever ate vegetables. I remember my mother eating a salad and of course, I had to taste what she was eating. The salad was very tasty and since then, I enjoy eating salads.
Grandma was notorious for making sure my brother and I ate our turnip greens (not my favorite at the time), but now I enjoy greens and it doesn’t matter what kind.
I thought it would be fun to list a few things that I know about vegetables. Feel free to take part in this exercise. How might you ask? Leave a comment and add your 2 cents.
1. Vegetables are high in fiber. Fiber acts as an intestinal broom, cleaning out the debris.
2. Vegetables are low in calories. Trying to lose weight, increase your vegetable intake.
3. Vegetables come in many different colors, sizes and shapes. Eat different colors. Think rainbow, when eating your veggies!
4. Vegetables help prevent cancer. Eat your broccoli, cabbage and other green leafy veggies that are high in sulfur. Well, just eat them all.
5. Vegetables are builders. They are high in vitamins, nutrients and especially minerals.
6. Eat vegetables in many ways. You can eat vegetables uncooked, steamed, baked, roasted, stir fried, etc. You won’t get bored eating vegetables.
7. Vegetables are high in minerals. The human body needs minerals in carrying out reactions in the body. What better place to get your minerals than from your veggies.
8. Vegetables help improve hair, nails and skin. Hair, nails and skin love vegetables, especially those vegetables high in sulfur. Sulfur is not the only thing you need for hair, nails and skin improvement, but definitely at the top of the list.
9. Vegetables help aid in weight loss. Those of you who are on a weight loss journey, remember to eat your veggies. High in fiber, low in calories, good carbohydrates; you can’t get any better than that.
10. Okra is not a vegetable. Yeah had to throw this in, because I’ve always thought of okra as a vegetable, but it’s not. Produce with seeds present are technically classified as fruits.
11. Grow your own vegetables. You can grow your favorite vegetables, almost effortlessly. Well, not quite. You will need to invest some time and give your garden the tender, love and care that it needs. You will save money growing your own vegetables.

I guess, as kids, most of us didn’t like to have our veggies π Other then the bitter gourd I like almost all the vegetables but I read somewhere that bitter gourd juice cures haemorrhoid, it was surprising to learn that vegetables can cure certain illness. I’m more a non-veg but after coming to know about the benefits of vegetables I’ve realized that its better to lean more to a vegetarian diet.

Yeah, it’s like tomatoes. Anything that has a seed inside is technically a fruit. But we tend to lump okra and tomatoes in the veggie category. Some would call them vegetable fruits. π

As a vegetarian child in Vegetarian family, I had no other choices to eat. However, I did have disliking to some vegetables which I am still getting better at, such as eggplant, mushrooms and bitter gourd. Improvement happening though.

Thanks for your suggestions on healthier eating. While I don’t have a strong disregard towards any one particular vegetable. Well, I take that back, brussel sprouts are a definite no, no. My motto is, “Butter makes anything taste better!” π

Veggies should definitely be the main part of our diet… they are so beneficial to our health. I always opt for veggie burgers during lunch… when I eat too much meat, I don’t have as much energy during the afternoon

I’m not a fan of veggies so I have to work at it, and continue to learn to like them.
Like you, I did enjoy salads though, and that’s still the best way I get vegetables (besides whatever lands on my pizza π
A friend of mine juices her vegetables and I think that’s great. That’s a path I might try.
Dr. Joel Fuhrman is one of the biggest advocates of vegetables I know, with the science behind it and his focus is on nutritional density. It’s another great argument for vegetables.
I’m curious — what are the specifics on how sulfur relates to cancer?

Yeah, juicing is a great way to get your veggies. I’ll be doing more juicing myself. I’m bad at not juicing and I know it is beneficial. See I told you, I ‘m a work in progress. π
I have one of Dr. Furhman’s books and you’re right.
I really don’t know the specifics of how sulfur relates to cancer. But I do know there are some veggies that are high in sulfur that are good at helping with cancer. Here’s an article I found that you may find of interest.

I think it’s important to know that vegetables are not across the board happy and healthy for everyone unless your digestive system is in perfect shape.
A number of vegetables are high in oxalates, which can trigger or contribute to pain in inflammation. Spinach and chard are two examples. I avoid them like the plague! Then there are the dear nightshade vegetables…tomatoes, potatoes, peppers… which can trigger arthritis in some people.
Now, not to be a downer or anything…I think the ticket is knowing what’s healthy for you, which may very likely be different than the person next to you.

I don’t think you’re being a downer about this, because what’s good for some may not be good for others. I myself don’t eat a lot of spinach or chard because of what you’ve mentioned.

I love veggies! I know adults who won’t touch a veggie unless it’s a french fry. That’s so strange to me. I’ve noticed that when the majority of my diet is fruit and veggies, my skin clears up really well. I’ve noticed my finger nails are stronger. So they’re a great beauty aid! I love vegetables! My dad had a garden when I was a kid, and we ate fresh asparagus, Brussels sprouts, and cabbage all summer long. To this day my favorites are Brussels sprouts – the veggie everyone loves to hate. Sounds like your grandma taught you how to love veggies, too!

No I love veggies. Here in Oz we say 2 fruit, 5 veg a day is what we should be eating. With it being summer here now, that is easy to get 5 veg in the salads π
We didn’t get a choice about eating veg as children so to me eating healthy was normal. Mum grew most of the veg and we had fruit trees too.
Too funny that you have a health blog when you didn’t like your veggies as a child. Just goes to show, we can all change our eating habits and get healthy π
